Ratafia

Ratafia de Champagne is an iconic specialty from our region, too often overlooked despite its delightful charm. Unlike champagne, it’s not a sparkling wine but rather a sweet and warming liqueur.

Its ancestral recipe relies on simple yet precise craftsmanship: freshly pressed grape must from the same grape varieties used in our champagnes, to which neutral alcohol is added to stop fermentation. This process preserves the grapes’ full aromatic richness, preventing the development of acidity or bubbles.
